Inspiration

One night, while making my favorite late-night snack—yogurt with peanut butter—I decided to toss in a few berries. One taste reminded me of how delicious peanut butter and jelly tastes together. So, I decided to make these overnight oats for the next morning.

Peanut Butter & Jelly Overnight Oats Ingredients

This is a really simple overnight oats recipe: 1 cup oats, 1 cup milk of your choice, and add-ins: peanut butter, black berries (one of my favorite berries), blueberries for sweetness, and flax seeds for their nutty flavor and nutritional value.

Results

The results are reminiscent of the peanut butter and jelly sandwiches I loved as a kid—exactly the nostalgic flavor I was hoping for.

They can be served hot or cold, and are great plain, or topped with Low Fat Granola for an added crunch.

Ingredients

  • 1 cup almond milk milk of your choice
  • ¼ cup peanut butter
  • 1 cup old-fashioned oats
  • ½ cup blueberries
  • ½ cup blackberries
  • 2 teaspoon ground flax seeds
  • sea salt

Instructions

  • In a medium mixing bowl, combine 1 cup almond milk and ¼ cup peanut butter. Add ½ cup blueberries, ½ cup blackberries, 2 teaspoon ground flax seeds, and 1 cup old-fashioned oats. Salt to taste.
