Ingredients
Wet Ingredients
- ¾ cup low-fat cottage cheese
- ¼ cup low-fat milk
- ½ banana over ripe
- ½ cup applesauce unsweetened
- ½ tsp vanilla
Dry Ingredients
- ½ cup rolled oats
- ½ cup oat bran
- 1 tbsp hemp seeds
- ½ tsp baking powder
- ½ tsp lemon juice
- 1 cup strawberries fresh or slightly defrosted frozen
Instructions
- Pre-heat oven to 325℉
- In a food processor, puree ¾ cup low-fat cottage cheese, ¼ cup low-fat milk, ½ banana, ½ cup applesauce, and ½ tsp vanilla.

- Stir in ½ cup rolled oats, ½ cup oat bran, 1 tbsp hemp seeds, and ½ tsp baking powder.

- Add lemon juice and salt to taste.
- Lightly oil baking dish.
- Pour half of the oat mixture into the pan.

- Cover with sliced strawberries.

- Pour the rest of the oat mixture over strawberries.
- Bake at 325℉ until toothpick comes out moist – about 30 minutes.

- This can be served hot after cooling for about 5 minutes, but I prefer this recipe cold from the refrigerator.

Notes
Frozen strawberries are a good choice when they aren’t fresh in your area. They are picked at peak ripeness.
