High Protein Strawberry Cottage Cheese Oats

Ingredients

Wet Ingredients

  • ¾ cup low-fat cottage cheese
  • ¼ cup low-fat milk
  • ½ banana over ripe
  • ½ cup applesauce unsweetened
  • ½ tsp vanilla

Dry Ingredients

  • ½ cup rolled oats
  • ½ cup oat bran
  • 1 tbsp hemp seeds
  • ½ tsp baking powder
  • ½ tsp lemon juice
  • 1 cup strawberries fresh or slightly defrosted frozen

Instructions

  • Pre-heat oven to 325℉
  • In a food processor, puree ¾ cup low-fat cottage cheese, ¼ cup low-fat milk, ½ banana, ½ cup applesauce, and ½ tsp vanilla.
    Pureed liquids
  • Stir in ½ cup rolled oats, ½ cup oat bran, 1 tbsp hemp seeds, and ½ tsp baking powder.
    Mixed oats
  • Add lemon juice and salt to taste.
  • Lightly oil baking dish.
  • Pour half of the oat mixture into the pan.
    Raw strawberry oats
  • Cover with sliced strawberries.

  • Pour the rest of the oat mixture over strawberries.
  • Bake at 325℉ until toothpick comes out moist – about 30 minutes.
    Baked Strawberry Oats
  • This can be served hot after cooling for about 5 minutes, but I prefer this recipe cold from the refrigerator.

Notes

Frozen strawberries are a good choice when they aren't fresh in your area. They are picked at peak ripeness.
