High Protein Strawberry Cottage Cheese Oats
Gluten free strawberry cottage cheese oat cake, with 10g protein, 6g fiber, no added sugar.

rolled oats

oat bran

hemp seeds

baking powder

lemon juice

strawberries
fresh or slightly defrosted frozen
Instructions
Pre-heat oven to 325℉
In a food processor, puree
¾ cup low-fat cottage cheese
,
¼ cup low-fat milk
,
½ banana
,
½ cup applesauce
, and
½ tsp vanilla
.
Stir in
½ cup rolled oats
,
½ cup oat bran
,
1 tbsp hemp seeds
, and
½ tsp baking powder
.
Add lemon juice and salt to taste.
Lightly oil baking dish.
Pour half of the oat mixture into the pan.
Cover with sliced strawberries.
Pour the rest of the oat mixture over strawberries.
Bake at 325℉ until toothpick comes out moist – about 30 minutes.
This can be served hot after cooling for about 5 minutes, but I prefer this recipe cold from the refrigerator.
Notes
Frozen strawberries are a good choice when they aren't fresh in your area. They are picked at peak ripeness.
